Most people use honey in one of two ways: stirred into tea, or spread on toast. Both are perfectly fine. Neither does justice to what a genuinely complex wild honey is capable of.

Wild Indonesian forest honey has a flavor profile rich enough to pair thoughtfully with a wide range of foods and drinks. Here is how to get the most from it.

The Flavor Profile of Indonesian Wild Forest Honey

Before pairing, it helps to understand what you are working with. There is a slight bitterness in the finish — not unpleasant, but present — and a long, lingering aftertaste that distinguishes it from the clean, one-dimensional sweetness of processed honey.

Cheese

Honey and cheese is one of the great pairings in food. The sweetness and acidity of honey cuts through the fat of aged cheese, while the floral and bitter notes of wild honey complement the sharpness of hard cheeses particularly well.

Try it with aged gouda, pecorino, or a strong blue cheese. Drizzle directly onto the cheese rather than serving separately — the combination on the palate is the point.

Charcuterie

Whisky and Spirits

Yogurt and Soft Cheese

The simplest and most versatile pairing. Full-fat yogurt or labneh with a generous drizzle of wild honey is a breakfast or dessert that requires nothing else. The acidity of the yogurt and the sweetness of the honey balance each other precisely.

Dark Chocolate

High-percentage dark chocolate (70% and above) and wild honey share a bitterness that, when combined, resolves into something more complex than either alone. A square of good dark chocolate with a small amount of honey is a dessert that rewards attention.

Warm Drinks

If you use honey in tea or coffee, add it after the drink has cooled slightly — not to boiling liquid. Heat above 40°C begins to degrade the enzymes and aromatic compounds that give raw honey its character. The difference in flavor when honey is added to warm rather than hot liquid is noticeable.
