How to Tell If Your Honey Is Real: 5 Tests You Can Do at Home

Honey adulteration is a global problem. 1. The Water Test

Drop a teaspoon of honey into a glass of cold water. Genuine raw honey will sink to the bottom and stay there, dissolving slowly. Adulterated honey or honey diluted with syrup will begin to dissolve immediately and cloud the water. This works because real honey has a low moisture content and high density; added syrups are more water-soluble.

2. The Crystallization Test

Real raw honey crystallizes over time. If your honey has been sitting in the cupboard for several months and remains perfectly liquid and clear, it has almost certainly been pasteurized, ultra-filtered, or adulterated. Crystallization is not a flaw — it is evidence of authenticity. (Note: some raw honeys crystallize faster than others depending on their glucose-to-fructose ratio.)

3. The Thumb Test

Place a small drop of honey on your thumb. Genuine honey is viscous and will stay in place. Adulterated honey with added water or syrup will spread and run. This is a rough test, but it is quick and indicative.

4. The Flame Test

Dip a matchstick in honey and attempt to light it. Raw honey, with its low moisture content, will allow the match to light. Honey with high water content — a common result of adulteration or premature harvesting — will not. Exercise appropriate caution with this test.

5. The Taste and Aroma Test

This is the most subjective test, but experienced honey consumers find it reliable. Genuine raw honey has a complex aroma — floral, slightly fermented, with depth. The flavor evolves on the palate and has a long finish. Adulterated honey tastes flat, uniformly sweet, and leaves no aftertaste. If your honey tastes like sugar syrup, it may well be.
