Why Your Honey Crystallises: The Science Behind a Mark of Purity
A customer unfamiliar with genuine raw honey may open a jar of Rock Hard Bee and pause. The honey has solidified. It has turned opaque, perhaps grainy in texture. Their instinct may be to question whether something has gone wrong. Nothing has gone wrong. Everything has gone right.
The Chemistry of Crystallisation
Honey is a supersaturated solution of sugars — primarily glucose and fructose — suspended in water. Glucose, being less soluble than fructose, naturally separates from the solution over time and forms crystals. This process is called granulation or crystallisation, and it is an entirely natural, inevitable property of real honey.
What Crystallisation Tells You
The rate and texture of crystallisation is determined by the glucose-to-fructose ratio of the honey, which is itself determined by the botanical source of the nectar. A honey rich in glucose — such as those drawn from certain forest flowers — will crystallise more rapidly and with a finer grain. This variability between harvests is not inconsistency. It is botanical honesty.
Why Commercial Honey Does Not Crystallise
Processed honey is heated and ultra-filtered specifically to delay or prevent crystallisation — because a crystallised product is perceived as defective by consumers conditioned to expect uniform liquid honey. The irony is that the processing required to prevent crystallisation destroys the very compounds that make honey worth consuming.
How to Restore Liquid Consistency
If you prefer your Rock Hard Bee honey in liquid form, place the jar in warm water — no hotter than 40°C — and allow it to return to liquid slowly. Never microwave. Never boil. The bioactive profile is preserved below 40°C. Above it, the enzymes begin to denature and the terpenes volatilise.
